GULLS EGGS HAVE ARRIVED

New Season Gulls Eggs

 

Only the Black-Headed Gull's Eggs can be collected for which you need a licence. Very few licences are issued by DEFRA which explains why they cost around £3.50 each to buy from a licenced dealer. The season is only three or four weeks long, from April through to May. Gulls can be disastrous for nesting birds as they will steal their eggs and so need controlling in certain areas of the country by taking away a proportion of eggs.

Their shells are mottled blue and green and very attractive, their whites a soft but firm blue tinged colour with startlingly orange yolks. Place them in cold salted water, bring to the boil and simmer gently for 8 minutes. You want the yolks to be firm not runny. Refresh in cold water, peel and serve with celery salt and little mayonnaise with some rye bread and a little mustard and cress on the side.
